Weekend Recap

Whew, I need a day off to recover from this weekend!!  So busy and full of fun!!  Friday night started with a pumpkin carving/decorating party.  I invited some girlfriends over for pumpkin decorating and to watch the Royals game...Go Royals!

I made Caramel Apple Cider Sangria, Green Chile Chicken Chili, and Apple Crisp Stuffed Apples.  Everything was delicious!!  The cider sangria is so easy and perfect for fall-hello, only 3 ingredients!  The chicken chili was really good-I only made 2 modifications.  I left out the jalapenos for people who can't handle spice and I used cilantro lime marinated chicken breasts instead of bone in chicken.  The baked apples were harder to make, but so worth it!!  I felt super proud of myself when they turned out so delicious and pretty!!

I even managed to decorate my pumpkins!  Before and after the Royals game, that is. :)

I had a headache Saturday morning (maybe too much sangria), so I didn't do my planned 10 miler.  I took some ibuprofen, cleaned up around the house and headed to the 3rd Annual Beer Olympics!  We all drive, so the beer portion is definitely not heavy drinking.

Texas coozie, Royals shirt, and cape-check, check, check!  I was ready to go!

Well, not as ready as this guy!  He won the best costume medal.

We were all ready for the events...first up, potato sack races...

I took silver in the "relay".  It consisted of bouncing a quarter into the cup (something none of us had done since college!  We were terrible!), chugging half of a beer, and flipping a solo cup.

Washers...

and beer pong...the cups were filled with water and we just took drinks of beer when someone made it in a cup.  All of these events are done in a bracket, so the winner would have had to play quite a few games.

I had to make up that 10 miler on Sunday, so I slept in and did a few things around the house before heading out for a run.  It was great weather!

Followed the run up with some football watching and puppy snuggles on the couch.

Have you ever done a Beer Olympics?

What did you do this weekend?

  1. What a weekend! I've never done a Beer Olympics, but those look like great photos...I love the one of you at the beer pong table, cape flying...

We had a fairly quiet weekend...it was rainy and gray and just made everyone want to stay home and stay warm and cozy. You did make alot of new recipes on Friday!
