Last night I made a delicious recipe that a friend found on Pinterest and then I borrowed the idea of it. Sloppy Joe stuffed peppers. They are wonderful and MUCH healthier than regular sloppy joes. Super easy too!
I roasted 2 bell peppers in the oven for about 20 minutes at 425 degrees before stuffing them so they were soft and a little charred. For the sloppy joes stuffing, I used extra lean ground beef and a can of the manwhich mix. Then cut the peppers in half and stuff with the sloppy joe mix and top with cheese. Bake until the cheese melts (since the peppers are already roasted). This is a great alternative to a comfort food dinner. Each half of a pepper is about 375 calories and are super filling and hearty.
