Low Key Kinda Week

This week has been fantastic outside. Nice weather, March Madness beginning, and spring right around the corner. I am loving it!!

I have also noticed that this has been an unusual down week for me. Off week from indoor volleyball and no sand yet. I am not accustomed to having so many free nights!! It is a good thing because I have tons of errands and silly things to get done!!

I decided to ride my bike inside to switch up my activities for the week. Plus, it gave me a chance to catch up on Cougar Town. Normally, I drink wine while I watch, but I am so behind!! I figured that biking is better for me anyway. I biked for an hour with lots of furry help!!


After I finished biking, I took the furry helper (who barked at the bike) out for a little walk to burn off some puppy energy!


After our walk, I tried out a new recipe.  Well, new to me anyway.  I modified this recipe from Skinny Taste.
Spaghetti Squash Italian Bake
6 servings--> 250 calories each

Spaghetti Squash:
Poke holes in spaghetti squash (3 lbs) and cook in the microwave for 10-12 minutes.  Turn it over once during the cooking process or one side will start to overcook. 

Filling:
3 Trader Joes Spicy Italian Chicken Sausage Links
1 medium onion-finely chopped
1 red bell pepper-finely chopped
1 can of diced italian tomatoes
Italian seasoning
Garlic

Additional Ingredients:
Grated Parmesan
Shredded Mozzarella-fat free

Steps:
Saute the chicken sausage, onion and peppers until the onions are translucent and the peppers are thoroughly cooked.  Add in diced tomatoes, italian seasonings and garlic and let simmer for a few minutes. 

Scoop out the seeds from the spaghetti squash and dispose of them.  Then scoop out the squash strings.  I put mine in the bottom of a casserole dish.  (If you want a fancier serving, you could put them back in the spaghetti squash shell.) 

Top with a light dusting of grated parmesan cheese.

Evenly spread the sausage mixture on next and top with 1 cup of mozzarella. 

Bake at 350 degrees until cheese is melted (5-10 minutes).
