Clean Eating Monday

I have tried a few new recipes that are super clean!!  I thought I would share a couple with you guys today.

#1-Breakfast this morning-I made egg cups from a little bit of a modified version of this recipe from Katie at Running4Cupcakes.

Ingredients that I used:
Jimmy Dean Turkey Sausage Crumbles
1 red bell pepper-finely chopped
1 small yellow onion-finely chopped
6 eggs
Salt and Pepper

I just put all of the ingredients into a muffin tin and baked for 30 minutes.  You can add cheese-which would be delicious!  I am still in the cleanse phase of 24DC, so I skipped that.  They are less than 150 calories for 2 muffins (from a 12 muffin tin).  I added a little hot sauce on top and they taste just like an omelet, but way easier.  We put the rest in the fridge to eat for tomorrow and Wednesday's breakfasts!



The other recipe that I tried is from The Gracious Pantry.  There are tons of clean recipes on this lady's blog.  I made Garlic Chicken and Carrots last night.  It was so good and I followed the recipe very closely (which is rare for me.  Served over brown rice.  Easy and delicous!!  We were starving, so I didn't take a pic.  Borrowed from The Gracious Pantry:



The pup got to try peanut butter from the jar for the first time on Saturday.  He loves it!!!
